Sample Recipe from LOTS OF COTS:

Curried Apricot Rice Salad

1/3 c. mayonnaise
1/3 c. yogurt
1 clove garlic, minced
2 tsp. lemon juice
1 ½ tsp. curry powder
½ tsp. cumin
½ to 1 tsp. finely chopped
jalapeno pepper
1 tsp. salt

1 ½ cups chopped, dried apricots
½ cup diced red apple
½ cup chopped celery
1/3 cup chopped peanuts
1/3 cup flaked coconut
1/3 cup sliced green onion
2 TBS. finely chopped cilantro
1 quart hot, cooked long grain rice.

Combine mayonnaise and next 7 ingredients; set aside. Toss apricots with the next 6 ingredients; gently stir into hot rice. Add mayonnaise mixture and carefully toss. Chill before serving. Makes 12 servings.
